  • 1 cup Hot Water or Coffee
  • 1 cup Vegetable Oil
  • 2 cups Granulated Sugar
  • 4 large Eggs
  • 2 teaspoons Vanilla Extract
For the Coconut Pecan Frosting
  • 1 cup Brown Sugar
  • 1 cup Evaporated Milk
  • 1/2 cup Unsalted Butter
  • 3 large Egg Yolks
  • 1 1/3 cups Shredded Sweetened Coconut
  • 1 cup Chopped Pecans

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C). Grease three 8-inch (or two 9-inch) round cake pans with butter or cooking spray.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, beat together sugar, vegetable oil, eggs, and vanilla until smooth.
  4. Gradually add the dry mixture to the wet mix, alternating with buttermilk, and then stir in hot water or coffee.
  5. Pour the batter evenly into the prepared pans. Bake for 25–30 minutes or until a toothpick comes out clean.
  6. While the cakes cool, make the frosting by combining brown sugar, evaporated milk, butter, and egg yolks in a saucepan.
  7. Cook the frosting mixture over medium heat, stirring continually for about 10–12 minutes until thickened.
  8. Remove from heat and stir in vanilla, coconut, and pecans until well combined. Allow to cool slightly.
  9. Once cooled, assemble the cake by layering and frosting between the cake layers and on top.
