Baking Instructions
- Preheat your oven to 350°F (175°C). Grease three 8-inch (or two 9-inch) round cake pans with butter or cooking spray.
- In a large mixing bowl, whisk together the dry ingredients: flour, cocoa powder, baking soda, baking powder, and salt.
- In a separate bowl, beat together sugar, vegetable oil, eggs, and vanilla until smooth.
- Gradually add the dry mixture to the wet mix, alternating with buttermilk, and then stir in hot water or coffee.
- Pour the batter evenly into the prepared pans. Bake for 25–30 minutes or until a toothpick comes out clean.
- While the cakes cool, make the frosting by combining brown sugar, evaporated milk, butter, and egg yolks in a saucepan.
- Cook the frosting mixture over medium heat, stirring continually for about 10–12 minutes until thickened.
- Remove from heat and stir in vanilla, coconut, and pecans until well combined. Allow to cool slightly.
- Once cooled, assemble the cake by layering and frosting between the cake layers and on top.
