Dough Preparation
- Combine 4 cups of bread flour, 2 teaspoons of instant yeast, 1/4 cup of sugar, and 1 tablespoon of mixed spices in a mixing bowl. Gradually pour in 1 cup of warm milk and 1/4 cup of melted butter, mixing until a shaggy dough forms.
- Transfer the dough to a lightly floured surface and knead for about 10 minutes until smooth and elastic.
- Place the kneaded dough in a lightly oiled bowl, cover, and set in a warm spot to rise until doubled in size, about 1 to 2 hours.
- Once risen, punch the dough down gently, incorporate 1 cup of your choice of dried fruit, then divide into 12 portions and shape into buns.
- Cover the shaped buns and allow them to rise for another 30 to 45 minutes.
- Preheat your oven to 375°F (190°C) and bake the buns for 20 to 25 minutes until golden brown.
- Prepare the glaze by mixing 1/2 cup of orange juice with the zest of one orange and brush it over the warm buns.
