Method
 

Dough Preparation
  1. Combine 4 cups of bread flour, 2 teaspoons of instant yeast, 1/4 cup of sugar, and 1 tablespoon of mixed spices in a mixing bowl. Gradually pour in 1 cup of warm milk and 1/4 cup of melted butter, mixing until a shaggy dough forms.
  2. Transfer the dough to a lightly floured surface and knead for about 10 minutes until smooth and elastic.
  3. Place the kneaded dough in a lightly oiled bowl, cover, and set in a warm spot to rise until doubled in size, about 1 to 2 hours.
  4. Once risen, punch the dough down gently, incorporate 1 cup of your choice of dried fruit, then divide into 12 portions and shape into buns.
  5. Cover the shaped buns and allow them to rise for another 30 to 45 minutes.
  6. Preheat your oven to 375°F (190°C) and bake the buns for 20 to 25 minutes until golden brown.
  7. Prepare the glaze by mixing 1/2 cup of orange juice with the zest of one orange and brush it over the warm buns.
