  • 1 large Lavash Wrap or burrito-style wrap
For the Filling

For the Protein
  • 1 cup Egg Whites whole eggs can be used for richer flavor
  • 1 cup Shredded Mozzarella dairy-free mozzarella can be swapped
  • 1/2 cup Crumbled Feta vegan feta is a good alternative

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet, heat a tablespoon of oil from sun-dried tomatoes over medium heat. Add fresh spinach and sauté for about 2-3 minutes until wilted.
  3. Mix in sun-dried tomatoes, garlic powder, Italian seasoning, and salt and pepper. Stir for another 1-2 minutes.
  4. Pour egg whites over the spinach mixture in the skillet, cover with a lid and let cook for 3-4 minutes.
  5. Lay a lavash wrap flat and place the egg and spinach mixture in the center. Sprinkle mozzarella and feta on top.
  6. Roll the lavash wrap tightly like a burrito, ensuring to tuck in the sides. Lightly spray with cooking spray.
  7. Place the wrap seam-side down on the baking sheet and bake for 5-10 minutes until golden.
  8. Remove from the oven, let sit for a minute, slice in half, and serve warm.
