Method
 

Step-by-Step Instructions
  1. Prepare Marinade: In a large mixing bowl, combine the plain Greek yogurt, olive oil, lemon juice, grated ginger, minced garlic, and all the spices: garam masala, paprika, turmeric, cumin, cayenne, and salt. Whisk together until smooth.
  2. Marinate Chicken: Score the skinless chicken pieces and coat with the marinade. Cover and refrigerate for at least 12 hours, ideally 24 hours.
  3. Preheat Oven: Preheat your oven to 200°C (400°F) and prepare a baking tray with aluminum foil and a greased wire rack.
  4. Bake Chicken: Arrange the marinated chicken on the rack and bake for 30 minutes. Flip and bake for an additional 10 to 15 minutes until cooked through.
  5. Rest & Serve: Allow the chicken to rest for a few minutes, garnish with cilantro and serve with lemon wedges.
