In a mixing bowl, combine the boiling water and both the flavored and unflavored gelatin. Stir until completely dissolved.
Add the cold water, lemon juice, and honey or agave syrup (if using) to the mixture. Stir well to combine.
Pour the mixture into a 9x13-inch baking dish or a silicone mold for easier removal.
Refrigerate for about 2-4 hours, or until the gelatin is fully set.
Once set, remove from the refrigerator and cut into strips or desired shapes.
Roll the strips in parchment paper or plastic wrap for easy storage and serving.
