- Preheat your oven to 200°C (400°F) and line your baking tray with greaseproof paper.
- Unroll the ready-made puff pastry onto the prepared baking tray and score it into three equal sections lengthwise.
- Slice diagonal strips about 3/4 to 1-inch wide down each side of the puff pastry, stopping just at the center.
- In a mixing bowl, combine the lemon curd with cream cheese, icing sugar, vanilla extract, and cornflour until smooth.
- Fold alternate strips over the filling, overlapping them to create a braid effect.
- Brush the top of the pastry braid with a lightly beaten egg for a shiny finish.
- Bake in the preheated oven for 17-22 minutes until golden and puffed up.
- Allow to cool on a wire rack for about 30 minutes, then slice and serve.
