Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound chicken breast cut into bite-sized pieces
  • 1 pound apple chicken sausage sliced
  • 2 cups Brussels sprouts trimmed and halved
  • 2 cups sweet potatoes peeled and diced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the chicken pieces, sliced apple sausage, Brussels sprouts, and sweet potatoes.
  3. Drizzle the olive oil over the mixture and sprinkle with garlic powder, onion powder, smoked paprika, salt, and pepper. Toss everything together until well coated.
  4. Spread the mixture evenly on a large baking sheet.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender, stirring halfway through.
  6. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
