- In a large mixing bowl, add 6 cups of fresh baby spinach. Core and thinly slice one Gala or Honeycrisp apple, arranging the slices in the bowl. Add a quarter cup of thinly sliced red onion on top.
- Pour about a third of a cup of homemade apple cider vinaigrette over the mixture. Gently toss the ingredients together until the spinach is lightly coated in the dressing.
- Sprinkle in a half cup of candied pecans, 2 ounces of crumbled goat cheese, and a half cup of dried cranberries. Toss the salad again for even distribution.
