  • 1 whole Gala or Honeycrisp apple cored and thinly sliced
  • 1/4 cup red onion thinly sliced
  • 1/2 cup candied pecans substitute with walnuts or almonds if desired
  • 2 ounces goat cheese or 1/4 cup Pecorino cheese
  • 1/2 cup dried cranberries or raisins as alternatives
  • to taste sea salt
  • to taste black pepper freshly ground
For the Dressing
  • 1/3 cup apple cider vinaigrette homemade

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, add 6 cups of fresh baby spinach. Core and thinly slice one Gala or Honeycrisp apple, arranging the slices in the bowl. Add a quarter cup of thinly sliced red onion on top.
  2. Pour about a third of a cup of homemade apple cider vinaigrette over the mixture. Gently toss the ingredients together until the spinach is lightly coated in the dressing.
  3. Sprinkle in a half cup of candied pecans, 2 ounces of crumbled goat cheese, and a half cup of dried cranberries. Toss the salad again for even distribution.
  4. Season with a pinch of sea salt and a grind of black pepper. Toss gently to incorporate the seasoning, adjusting to taste.
  5. Transfer your salad to a serving platter or serve directly from the mixing bowl. Enjoy immediately or chill for 10-15 minutes before serving.
