In a large mixing bowl, combine the mashed bananas, eggs, honey (or maple syrup), melted coconut oil (or butter), and vanilla extract. Mix until well combined.
Add the baking soda, salt, and ground cinnamon (if using) to the banana mixture and stir until incorporated.
Gradually add the almond flour to the mixture, stirring until just combined. If desired, fold in the chopped walnuts or chocolate chips.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
