Method
 

Step-by-Step Instructions
  1. In a blender, combine soy yogurt, apple butter, Medjool dates, miso paste, vanilla extract, cinnamon, cardamom, salt, and soy milk. Blend until smooth.
  2. Transfer the blended mixture to a bowl. Add chia seeds and whisk thoroughly for about 30 seconds. Let sit for 5 minutes, then whisk again.
  3. In a food processor, pulse together oats, walnuts, and a couple of Medjool dates until it resembles coarse crumbs.
  4. Heat a skillet over medium heat, add diced apples with maple syrup, cinnamon, and salt. Sauté for about 3-4 minutes until soft.
  5. In jars or bowls, layer the chia pudding, stewed apples, and crumble. Repeat layering and drizzle with additional apple butter or maple syrup.
