- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or aluminum foil.
- Slice a small slit lengthwise down the center of each Mejool date. Stuff them with your choice of creamy cheese.
- Wrap each stuffed date with a half slice of bacon, seam side down, and place on the prepared baking sheet.
- Bake the wrapped dates in the preheated oven for 10 minutes. Flip them and bake for an additional 10-12 minutes until the bacon is golden and crisp.
- Remove from the oven and transfer to a paper towel-lined plate. Let cool for about 5 minutes before serving.
