Basic Instructions
- Preheat your oven to 350°F (175°C) and lightly grease an 8x8 inch baking dish.
- In a medium mixing bowl, whisk together the almond milk, egg, maple syrup, orange zest, and vanilla extract.
- Add the oats, baking powder, ground cinnamon, and sea salt to the wet mixture and stir until just combined.
- Gently stir in half of the cranberries into the oatmeal mixture and transfer to the prepared baking dish.
- Sprinkle the remaining cranberries and pecan pieces on top.
- Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
- Allow to cool slightly in the dish.
- In a mixing bowl, beat the cream cheese until smooth, then add the powdered sugar and orange juice to combine.
- Drizzle the cream cheese glaze over the cooled oatmeal and serve warm.
