Method
 

Basic Instructions
  1. Preheat your oven to 350°F (175°C) and lightly grease an 8x8 inch baking dish.
  2. In a medium mixing bowl, whisk together the almond milk, egg, maple syrup, orange zest, and vanilla extract.
  3. Add the oats, baking powder, ground cinnamon, and sea salt to the wet mixture and stir until just combined.
  4. Gently stir in half of the cranberries into the oatmeal mixture and transfer to the prepared baking dish.
  5. Sprinkle the remaining cranberries and pecan pieces on top.
  6. Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
  7. Allow to cool slightly in the dish.
  8. In a mixing bowl, beat the cream cheese until smooth, then add the powdered sugar and orange juice to combine.
  9. Drizzle the cream cheese glaze over the cooled oatmeal and serve warm.
