Preheat your oven to 375°F (190°C). Grease a small baking dish with olive oil.
In a mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well combined.
Stir in the chopped spinach and half of the shredded cheese into the egg mixture.
Pour the egg mixture into the prepared baking dish.
Sprinkle the remaining cheese evenly over the top.
Bake in the preheated oven for 20-25 minutes, or until the eggs are set and the top is lightly golden.
Remove from the oven and let it cool for a few minutes. Garnish with fresh herbs before serving.
