  • 1 tbsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • 1 tsp Black Pepper
  • 1 tsp Red Pepper Flakes
  • 2 cups Cheddar Cheese or Monterey Jack/Pepper Jack
  • 0.5 cup Cilantro for garnish
  • 0.5 cup Green Onions for garnish

  • 1 cup Sour Cream for creaminess
  • 1 medium Avocado sliced
  • 1 medium Lime cut into wedges

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and coat a casserole dish with non-stick spray.
  2. In a large skillet over medium heat, brown the ground beef with diced onion for 8-10 minutes.
  3. Add minced garlic and sauté for 2 minutes until fragrant.
  4. Drain excess fat and stir in diced tomatoes, enchilada sauce, black beans, corn, cooked rice, and all seasonings.
  5. Cover and let the mixture simmer on medium-low heat for about 10 minutes.
  6. Transfer the mixture into the casserole dish and top with shredded cheddar cheese.
  7. Bake for approximately 20 minutes until the cheese is melted and bubbly.
  8. Let the casserole cool for a few minutes, then garnish with chopped cilantro and sliced green onions.
