Preparation Steps
  1. Allow the beef tenderloin to rest at room temperature for 30 minutes. Season with salt and pepper.
  2. Heat olive oil in a cast-iron skillet and sear the seasoned seasoned beef tenderloin until golden-brown on all sides.
  3. Let the beef rest for at least 10 minutes after cooking.
  4. In a saucepan, melt butter, add flour to create a roux, then whisk in heavy cream and Parmesan cheese.
  5. Preheat the oven to 375°F, slice the bread, brush with olive oil, and bake until golden.
  6. Slice the rested beef thinly and assemble on toasted crostini with Parmesan cream sauce, garnishing with parsley and extra cheese.
