Step-by-Step Instructions
  1. Brown the Ground Beef and Italian Sausage in a large pot with olive oil, seasoning with salt and pepper. Cook for 5-7 minutes until browned.
  2. Drain excess grease and add diced yellow onion. Sauté for 5 minutes, then add minced garlic and cook for 1-2 minutes.
  3. Stir in tomato paste and cook for 1 minute to enhance flavor.
  4. Pour in marinara sauce and broth, add crushed red pepper flakes, and bring to a gentle boil.
  5. Reduce heat, return meat, and let simmer for 10-15 minutes to meld flavors.
  6. Add broken lasagna noodles and cook for 10-12 minutes until tender.
  7. Fold in baby spinach during the last 2-3 minutes until wilted.
  8. Mix ricotta, mozzarella, and parmesan in a bowl until combined. This will be your topping.
  9. Ladle soup into bowls and top generously with the cheese mixture and fresh basil.
