  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 can 10 ounces diced tomatoes with green chilies (like Rotel), drained
  • 1 packet 1 ounce ranch dressing mix
  • 1 cup cooked and crumbled bacon about 6 slices
  • 1/4 cup chopped green onions optional
  • Tortilla chips or crackers for serving

Method
 

  1. In a large mixing bowl, combine the softened cream cheese and sour cream. Use a hand mixer or a spatula to blend until smooth and creamy.
  2. Add the shredded cheddar cheese, drained diced tomatoes, ranch dressing mix, and crumbled bacon to the bowl. Stir until all ingredients are well combined.
  3. If desired, fold in the chopped green onions for added flavor and crunch.
  4. Transfer the dip to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled with tortilla chips or crackers for dipping.
