Ingredients
  

  • 8 ounces rotini pasta
  • 1 cup cherry tomatoes halved
  • 1 cup fresh mozzarella balls halved
  • 1/2 cup fresh basil leaves chopped
  • 1/4 cup red onion finely diced
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, mozzarella balls, basil, and red onion.
  3. In a small bowl, whisk together the balsamic vinegar, olive oil, garlic powder, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss gently to combine all ingredients evenly.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
  6. Serve cold or at room temperature, garnished with extra basil if desired.
