For the Skillet
  • 1 pound Boneless, Skinless Chicken Breasts cut into bite-sized chunks
  • 8 ounces Rotini Pasta or swap with penne or farfalle
  • 2 tablespoons Olive Oil for cooking chicken
  • 2 teaspoons Cajun Seasoning adjust based on spice preference
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 4 cloves Garlic minced
  • 2 tablespoons Butter
  • 1 cup Heavy Cream or use light cream
  • 1 cup Chicken Broth
For the Cheesy Finish
  • 1 cup Shredded Mozzarella can experiment with other cheeses
  • 1/2 cup Grated Parmesan
  • 1/2 cup Cheddar Cheese
  • 1/4 cup Fresh Parsley for garnish

Method
 

Cooking Steps
  1. Boil a large pot of salted water, add rotini pasta and cook until al dente, about 8–10 minutes. Drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook for 6–7 minutes until fully cooked.
  3. In the same skillet, reduce heat to medium, add butter, and sauté minced garlic for 30 seconds. Stir in chicken broth and cream, bring to a simmer for 3–4 minutes.
  4. Add mozzarella, Parmesan, and cheddar cheese, mixing until melted and smooth.
  5. Toss in cooked chicken and rotini, coat with sauce, and simmer for 2–3 minutes.
  6. Garnish with fresh parsley and serve hot.
