- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the butter, sugar, and apple cider mix until light and fluffy. Incorporate the egg and vanilla extract until smooth.
- In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
- Gradually add the dry mixture to the wet ingredients until just combined.
- Fold in the caramel bits carefully to distribute evenly.
- Drop dough balls onto the baking sheets, spacing them about 3 inches apart.
- Bake for 11-12 minutes, until the edges are golden but centers are still soft.
- Remove from oven, reshape edges if necessary, and transfer to a wire rack to cool completely.
