  1. Begin by patting the chicken thighs dry with paper towels and season with salt and pepper.
  2. In a large pot, heat the vegetable oil over medium-high heat until shimmering.
  3. Sear the chicken thighs skin-side down for 5-7 minutes until golden brown, undisturbed.
  4. Flip the chicken, then add soy sauce, brown sugar, garlic, and ginger, stirring to combine.
  5. Pour in chicken broth, ensuring chicken is submerged, and raise the heat to boil.
  6. Cover and simmer on low heat for approximately 20 minutes until chicken is cooked through.
  7. Rinse jasmine rice under cold water to remove excess starch.
  8. In a separate pot, bring water to boil, add rinsed rice, cover, and reduce heat to simmer for 15-20 minutes.
