Ingredients
  

  • 1 pound ground beef
  • 1 pound ground pork
  • 1 cup breadcrumbs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 2 large eggs
  • 1/4 cup barbecue sauce plus extra for topping
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika

Method
 

  1. Preheat your smoker to 250°F.
  2. In a large bowl, combine the ground beef, ground pork, breadcrumbs, cheddar cheese, onion, bell pepper, eggs, barbecue sauce, Worcestershire sauce, garlic powder, onion powder, salt, black pepper, and smoked paprika.
  3. Mix until well combined, but do not overmix.
  4. Shape the mixture into a loaf and place it on a piece of parchment paper.
  5. Transfer the meatloaf to the smoker and cook for about 2 to 2.5 hours, or until the internal temperature reaches 160°F.
  6. During the last 30 minutes of cooking, brush additional barbecue sauce on top of the meatloaf for added flavor.
  7. Once cooked, remove from the smoker and let it rest for 10 minutes before slicing.

Notes
