  • 1/2 cup Sour Cream Greek yogurt can be used as a substitute
  • 1/4 cup Chopped Green Onions Can replace with chives or omit
  • 1 cup Diced Tomatoes Fresh or canned works well
  • 1/2 cup Sliced Black Olives Jalapeños can be used for spiciness
  • 1/4 cup Chopped Cilantro Omit if not to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Scrub the russet potatoes under cold water, poke holes in each potato with a fork, coat with olive oil, and season with salt and pepper.
  2. Place the potatoes on the oven rack or a baking sheet and bake for 45-60 minutes until tender.
  3. In a medium skillet over medium heat, cook the ground beef until browned, about 7-10 minutes. Drain excess fat, stir in taco seasoning, and simmer for 5 minutes.
  4. Remove the baked potatoes from the oven, let cool slightly, slice them lengthwise, and fluff insides with a fork.
  5. Fill each potato with ground beef and top with shredded cheese. Return to the oven for 10-15 minutes until cheese is melted.
  6. Add desired toppings such as sour cream, green onions, diced tomatoes, black olives, and cilantro. Serve warm.
