  • 1 large Red bell pepper Swap with yellow or orange if desired.
  • 1 small Jalapeño Adjust for spice preference.
  • 1 lime Lime Fresh lime juice is best.

Method
 

Step-by-Step Instructions
  1. In a shallow dish, combine shredded coconut, breadcrumbs, salt, pepper, garlic powder, and paprika. Mix well and set aside.
  2. Set up three shallow dishes: one with flour, one with beaten eggs, and one with the coconut mixture.
  3. Dredge each fish fillet in flour, dip in eggs, and then press into the coconut coating. Set aside on a plate.
  4. Heat oil in a large skillet over medium heat for 2-3 minutes. Test if oil is ready by adding a small piece of fish.
  5. Fry the coated fillets for about 4-5 minutes on each side until golden brown and crispy. Drain on paper towels.
  6. In a mixing bowl, combine diced mango, red onion, red bell pepper, jalapeño, lime juice, and a pinch of salt. Mix gently.
