  • 1/4 cup fresh lime juice about 2 limes
  • 2 tablespoons honey
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1/4 cup fresh cilantro chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together the coconut milk, lime juice, honey, garlic, ginger, salt, pepper, and paprika until well combined.
  3. Place the chicken thighs in a large baking dish and pour the coconut lime mixture over the chicken, ensuring all pieces are well coated.
