  • 2 cups Cheddar cheese Shredded; can substitute with mozzarella or gouda.

Step-by-Step Instructions for One Pot Cheesy Chicken Broccoli Rice Casserole
  1. In a large, oven-proof skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped onion and 1 pound of cubed chicken breasts, cooking for about 5 minutes until the chicken is browned and no longer pink.
  2. Stir in 2 minced garlic cloves into the skillet with the chicken mixture. Sauté the garlic for about 30 seconds.
  3. Add in 1 cup of long-grain white rice, 1 can of cream of chicken soup, and 2 cups of chicken broth. Stir well and bring to a gentle boil.
  4. Once boiling, cover the skillet with a lid and reduce heat to low. Allow the rice to simmer for about 15 minutes.
  5. After the rice has cooked, mix in 2 cups of broccoli florets and 1 cup of shredded cheddar cheese. Cook for an additional 2 minutes.
  6. Preheat your oven's broiler, then sprinkle the remaining cheddar cheese on top. Broil for 1-2 minutes until melted and slightly golden.
