  • 1 cup cottage cheese
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder optional for chocolate flavor
  • 1/4 cup milk dairy or non-dairy
  • Pinch of salt

Method
 

  1. In a blender or food processor, combine the cottage cheese, peanut butter, honey (or maple syrup), vanilla extract, cocoa powder (if using), milk, and a pinch of salt.
  2. Blend on high speed until the mixture is smooth and creamy, scraping down the sides as needed.
  3. Taste and adjust sweetness if necessary by adding more honey or maple syrup.
  4. Once blended, transfer the mousse into serving bowls or cups.
  5. Chill in the refrigerator for at least 30 minutes to allow the flavors to meld and the mousse to set.
  6. Serve chilled, garnished with chopped nuts, chocolate shavings, or fresh fruit if desired.
