Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish with olive oil.
  2. Thaw and drain frozen mixed vegetables or chop fresh vegetables into bite-sized pieces.
  3. In a large mixing bowl, combine cottage cheese, eggs, garlic powder, onion powder, salt, and pepper until smooth.
  4. Fold in prepared mixed vegetables and half of the shredded cheddar cheese until well combined.
  5. Pour the mixture into the greased baking dish and top with remaining cheddar cheese.
  6. Bake for 25 to 30 minutes until golden and set, checking with a toothpick for doneness.
  7. Let it cool for 5 to 10 minutes before serving. Garnish with fresh herbs if desired.
