  • 4 medium Sweet Potatoes Choose firm ones
  • a pinch Salt
For the Filling
  • 1 cup Fresh Cranberries Frozen can work too
  • 2 medium Apples (Granny Smith or Honeycrisp) Chopped
  • 1/4 cup Brown Sugar Coconut sugar can be used
  • 1 teaspoon Ground Cinnamon Nutmeg or ginger can be added
  • 2 tablespoons Unsalted Butter Can substitute with coconut oil
Optional Toppings
  • as needed Nuts (Pecans or Walnuts) Chopped
  • as needed Maple Syrup Drizzle on top

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Place the sweet potatoes on a baking sheet lined with parchment paper, and pierce each potato with a fork.
  3. Bake for 45-60 minutes until tender.
  4. Let them cool for 10–15 minutes, then slice in half and scoop out most of the flesh.
  5. In a bowl, mix the sweet potato flesh, chopped apples, cranberries, brown sugar, cinnamon, butter, and salt.
  6. Fill each sweet potato skin with the mixture, mounding it slightly.
  7. Preheat oven to 350°F (175°C) and bake for an additional 20-25 minutes.
  8. Let sit for a few minutes before serving. Garnish with nuts or maple syrup if desired.
