Preparation Steps
- Preheat your oven to 400°F (200°C).
- Place the sweet potatoes on a baking sheet lined with parchment paper, and pierce each potato with a fork.
- Bake for 45-60 minutes until tender.
- Let them cool for 10–15 minutes, then slice in half and scoop out most of the flesh.
- In a bowl, mix the sweet potato flesh, chopped apples, cranberries, brown sugar, cinnamon, butter, and salt.
- Fill each sweet potato skin with the mixture, mounding it slightly.
- Preheat oven to 350°F (175°C) and bake for an additional 20-25 minutes.
- Let sit for a few minutes before serving. Garnish with nuts or maple syrup if desired.
