Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  2. In a large pot, bring salted water to a boil and cook the rotini pasta according to package instructions.
  3. In a large skillet, heat olive oil over medium heat and sauté the chopped onion until translucent.
  4. Add ground beef to the skillet and brown it for about 6-8 minutes.
  5. Stir in minced garlic and sauté until fragrant, about 1 minute.
  6. Add sweet corn and ranch seasoning mix, stirring and cooking for 2-3 minutes.
  7. In a separate bowl, whisk together sour cream, cheddar cheese, and milk until smooth.
  8. Combine cooked rotini with the beef and corn mixture, then pour creamy sauce over it and stir gently.
  9. Season with salt and pepper, then spread mixture evenly in the prepared baking dish.
  10. Bake in preheated oven for about 25-30 minutes until bubbly and golden brown.
  11. Allow to cool for 5-10 minutes before garnishing with parsley and serving.
