Method
 

Step-by-Step Instructions
  1. Generously season the chicken breasts with salt and pepper on both sides. Allow to rest for a few minutes.
  2. Heat olive oil in a large skillet over medium heat and cook chicken for 5-7 minutes on each side until golden brown. Transfer to a plate to keep warm.
  3. In the same skillet, add onion and bell pepper, sauté for 5 minutes until softened. Stir in minced garlic for an additional minute.
  4. Whisk together chicken stock and cornstarch in a bowl until smooth. Pour into the skillet with vegetables, add red chili flakes and turmeric. Simmer for 3-5 minutes until thickened.
  5. Stir in coconut milk and let simmer for another 3-5 minutes until creamy.
  6. Add lime juice and heavy cream, return chicken to skillet and spoon sauce over. Simmer for an additional 5-10 minutes.
  7. Remove from heat and garnish with cilantro. Serve warm.
