Ingredients
  

  • 8 ounces fettuccine or spaghetti
  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley chopped (for garnish)
  • Lemon wedges for serving

Method
 

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the shrimp to the skillet and season with salt, pepper, and Italian seasoning. Cook for 2-3 minutes on each side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted and smooth. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
  5. Return the cooked shrimp to the skillet and toss to coat in the creamy sauce. Add the cooked pasta and mix well until everything is combined and heated through.
  6. Serve immediately, garnished with fresh parsley and lemon wedges on the side.
