Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add chickpea pasta and cook for 7-10 minutes. Drain and rinse under cold water.
  2. In a mixing bowl, combine olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper. Whisk until emulsified.
  3. Add cooled chickpea pasta to the bowl. Chop and add fresh vegetables, and toss in chopped herbs.
  4. Pour the dressing over the pasta and vegetables. Fold gently until everything is coated.
  5. Transfer the salad to an airtight container or cover the bowl. Chill for at least 30 minutes.
