- Peel the sweet potatoes and cut them into 2-inch chunks. If using the stove top, place in a pot, cover with water, boil, then simmer for 10-15 minutes until fork-tender.
- For the Instant Pot, add peeled and chopped sweet potatoes to the pot with 1 cup of water. Seal and cook on high pressure for 8 minutes. Quick release the pressure afterward.
- Drain the sweet potatoes well using a colander, or drain off excess liquid if using the Instant Pot. Mash until smooth and creamy.
- Stir in half and half and butter, followed by orange zest and rosemary. Adjust seasoning with salt and pepper to taste.
