  • 8 oz Spaghetti Any pasta, including gluten-free options
  • 1 can Cream of Chicken Soup 10.5 oz; can use cream of mushroom soup
For the Flavor
  • 1/2 cup Onion, chopped Adds sweetness
  • 1/2 cup Bell Pepper, chopped Swap in favorite veggies like zucchini
  • 1 tablespoon Olive Oil Any cooking oil can be used
  • 1/2 teaspoon Garlic Powder Fresh garlic can replace it
  • 1/2 teaspoon Onion Powder
  • Salt and Pepper To taste
For Creaminess
  • 1 cup Sour Cream Greek yogurt can be a substitute
  • 1 cup Monterey Jack Cheese, shredded Can use mozzarella or pepper jack
  • 1/2 cup Cheddar Cheese, shredded Experiment with other varieties
  • 1/2 cup Milk Or chicken broth to adjust consistency
For Garnish
  • Fresh Parsley, chopped Optional

Method
 

Cooking Instructions
  1. Boil a large pot of water, add spaghetti and cook according to package instructions for 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil, add onion and bell pepper, and sauté for 5-7 minutes until soft.
  3. Mix in cream of chicken soup and sour cream, add garlic powder, onion powder, and milk, cook for 2-3 minutes until smooth.
  4. Fold in chicken and Monterey Jack cheese, cooking for another 2-3 minutes until cheese is melted.
  5. Add drained spaghetti to skillet, tossing until well-coated with the sauce, heat through for 1-2 minutes.
  6. For baked version, preheat oven to 350°F, transfer to baking dish, top with remaining cheese, and bake for 20-25 minutes.
  7. Garnish with parsley if desired and serve warm.
