- Boil a large pot of water, add spaghetti and cook according to package instructions for 8-10 minutes. Drain and set aside.
- In a large skillet, heat olive oil, add onion and bell pepper, and sauté for 5-7 minutes until soft.
- Mix in cream of chicken soup and sour cream, add garlic powder, onion powder, and milk, cook for 2-3 minutes until smooth.
- Fold in chicken and Monterey Jack cheese, cooking for another 2-3 minutes until cheese is melted.
- Add drained spaghetti to skillet, tossing until well-coated with the sauce, heat through for 1-2 minutes.
- For baked version, preheat oven to 350°F, transfer to baking dish, top with remaining cheese, and bake for 20-25 minutes.
- Garnish with parsley if desired and serve warm.
