Step-by-Step Instructions for Peanut Butter Chicken
  1. Heat vegetable oil in a large skillet over medium-high heat. Add chicken and cook for 5–7 minutes per side until browned. Set aside.
  2. In the same skillet, sauté chopped onion for 3–4 minutes until translucent. Add minced garlic and grated ginger, cooking for an additional minute.
  3. Reduce heat to medium and stir in creamy peanut butter. Cook for about 2–3 minutes until smooth.
  4. Slowly pour in coconut milk while stirring. Cook until the sauce is creamy, about 2 minutes.
  5. Add soy sauce, brown sugar, lime juice, chili powder, cumin, salt, and pepper. Stir to combine.
  6. Return chicken to the skillet, coating with sauce. Cover and simmer on low for 15–20 minutes until cooked through.
  7. Garnish with cilantro and roasted peanuts before serving.
