  • 8 ounces Pasta spaghetti or penne recommended
For the Salmon
  • 1 pound Salmon fresh, skin-on
For the Sauce
  • 2 tablespoons Olive Oil for sautéing
  • 3 cloves Garlic minced
  • 1 cup Cream or half-and-half
  • 2 cups Spinach fresh
For Flavor Enhancements

  • 2 tablespoons Dill fresh or dried
  • 1/2 cup Parmesan Cheese grated for garnish

Equipment

  • Large pot
  • Colander
  • Large skillet

Method

Step-by-Step Instructions
  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente, about 8 to 10 minutes. Drain, reserving some pasta water.
  2. Prepare the Salmon: Heat a skillet over medium-high heat and add olive oil. Season salmon with salt and pepper, skin-side down, and cook for 4 to 5 minutes until crispy, then flip and cook until opaque. Remove and set aside.
  3. Sauté the Garlic: In the same skillet, add more olive oil if needed, then sauté minced garlic for 30 seconds until fragrant.
  4. Make the Creamy Sauce: Slowly pour cream into the skillet while stirring. Simmer for 3 to 4 minutes, then add lemon juice and dill.
  5. Combine Ingredients: Add cooked pasta to the skillet, tossing to coat with sauce. Flake salmon on top and mix gently. Adjust consistency with pasta water if needed.
  6. Add Fresh Spinach: Stir in spinach until just wilted, about 1 to 2 minutes. Ensure everything is heated through.
  7. Serve and Garnish: Serve warm, garnished with grated Parmesan and additional dill or cracked pepper. Enjoy!
