Tacos

  • 1 can Black Beans drain but don’t rinse to keep flavor

  • 6 pieces Flour Tortillas 6” fajita-sized tortillas; consider corn for gluten-free
  • 1 cup Monterey Jack Cheese substitute with Pepper Jack or Cheddar
  • 2 tablespoons Homemade Taco Seasoning or store-bought for a time-saver

Method
 

Preparation Steps
  1. Make the Avocado Sauce: In a food processor, combine half of a ripe avocado, sour cream, lime juice, cilantro, kosher salt, and water. Blend until smooth. Refrigerate while preparing tacos.
  2. Cook the Turkey and Onions: Heat avocado oil in a non-stick pan over medium heat. Add turkey and onions, seasoning with half of your taco seasoning. Cook for 4-5 minutes.
  3. Finish the Filling: Stir in black beans and green chiles, add remaining taco seasoning and splash of water. Simmer for about 15 minutes.
  4. Prepare the Tacos: Preheat oven to 425°F (220°C). Brush a baking sheet with oil. Lay flour tortillas on the sheet and sprinkle Monterey Jack cheese on half.
  5. Assemble the Tacos: Fill the cheese-covered half with turkey mixture and fold the tortilla over to create a taco shape.
  6. Bake the Tacos: Bake for 10-12 minutes, or until tortillas are golden brown and crispy.
  7. Serve with Avocado Sauce: Let tacos cool slightly and serve warm with avocado sauce for dipping.
