Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a shallow bowl, combine flour, garlic powder, paprika, salt, and black pepper.
In another bowl, beat the eggs.
Place the panko breadcrumbs in a third bowl.
Dip each piece of salmon first into the flour mixture, then into the beaten eggs, and finally coat with panko breadcrumbs. Place the coated salmon bites on the prepared baking sheet.
Bake for 12-15 minutes or until the salmon is cooked through and the coating is golden brown and crispy.
While the salmon is baking, prepare the bang bang sauce by mixing mayonnaise, sweet chili sauce, sriracha, and lime juice in a small bowl.
Once the salmon bites are done, remove them from the oven and let them cool for a couple of minutes.
Serve the salmon bites drizzled with the bang bang sauce and garnish with chopped green onions.
