- Slice the sourdough bread into 1-inch thick slices.
- Chop the dill pickles into small chunks.
- Slice the dill Havarti cheese into 1/4-inch slabs.
- Layer half of the cheese on one slice of bread, add pickles, then top with remaining cheese and second slice of bread.
- Butter the outside of both slices generously.
- Cook in a skillet over medium-low heat for 4-5 minutes, pressing down gently.
- Flip and cook the second side for an additional 3-4 minutes until golden brown.
- Open the sandwich, add dill pickle chips, close gently, and let sit before cutting.
- Cut the sandwich diagonally and serve warm, ideally with tomato soup.
