- Preheat a sauté pan over medium-low heat for about 2-3 minutes.
- Lay two slices of sourdough bread on a clean surface and spread butter on one side of each slice.
- Place the buttered sides of the bread in the skillet and layer mozzarella cheese, basil pesto, and sun-dried tomatoes.
- Top each sandwich with the second slice of buttered sourdough bread, buttered side facing up.
- Cook for about 4-5 minutes until the bottom is golden brown.
- Flip the sandwiches over and cook the second side for another 4-5 minutes.
- Remove from the pan, cool for a minute, and slice in half before serving.
