Ingredients
  

For the Balls
  • 2 cups finely chopped corned beef
  • 1 cup well-drained sauerkraut
  • 1 cup shredded Swiss cheese
  • 8 oz cream cheese
  • 2 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • 2 cups panko breadcrumbs
  • 2 cups vegetable oil for frying
For the Spicy Thousand Island Dip
  • 1 cup mayonnaise
  • 1/4 cup ketchup
  • 1/4 cup sweet pickle relish
  • 1 tbsp hot sauce adjust to taste
  • 1 tsp smoked paprika
  • 1 tsp Worcestershire sauce
  • 1/4 cup minced onion

Method
 

Preparation
  1. In a large mixing bowl, combine finely chopped corned beef, well-drained sauerkraut, shredded Swiss cheese, cream cheese, Dijon mustard, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  2. Cover the bowl tightly and refrigerate the mixture for 30-45 minutes.
  3. Scoop out a portion of the mixture and roll it into a ball.
  4. Prepare a dredging station with flour, beaten eggs, and panko breadcrumbs.
  5. Roll each ball in flour, dip in egg, and coat with panko breadcrumbs.
  6. In a deep skillet, heat vegetable oil to 350°F. Fry the balls until golden brown and crispy, about 2-3 minutes.
  7. In a mixing bowl, whisk together mayonnaise, ketchup, sweet pickle relish, hot sauce, smoked paprika, Worcestershire sauce, and minced onion to make the dip.
  8. Serve the Reuben Balls warm with the spicy Thousand Island dip.
