  • 3 tbsp Extra Virgin Olive Oil or avocado oil or melted butter
  • 1 tbsp Chopped Fresh Rosemary or dried, thyme or oregano can be used
  • 1 tsp Garlic Powder can substitute with fresh minced garlic
  • 1 tsp Salt to taste
  • 1/2 tsp Freshly Ground Black Pepper can use white pepper as an alternative

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Boil the baby gold potatoes in a large pot of cold water until fork-tender, about 10–12 minutes. Drain and let dry.
  3. Return dried potatoes to pot. Add olive oil, rosemary, garlic powder, salt, and pepper. Shake to coat evenly.
  4. Transfer potatoes to a lined baking sheet and smash each potato. Drizzle with more oil and roast for 30–45 minutes until golden brown and crispy, turning halfway.
  5. Check for doneness by ensuring they are golden and crispy. Adjust roasting time as necessary.
  6. Cool for a minute before serving. Enjoy with your favorite entrees or as a snack.
