Method

Step-by-Step Instructions
  1. Begin by finely chopping the romaine or iceberg lettuce and shredding the red cabbage and carrot. If using leftover chicken, shred it into bite-sized pieces. Make sure to drain the jarred mandarin oranges and set them aside.
  2. In a large mixing bowl, combine the chopped lettuce, shredded cabbage, shredded chicken, drained mandarin oranges, crushed ramen noodles, shredded carrots, sliced green onions, and sliced almonds. Gently mix these ingredients together until well combined.
  3. In a small bowl, whisk together the rice wine vinegar, honey, sesame oil, hoisin sauce, and soy sauce. Add the minced ginger and garlic for flavor, and then slowly drizzle in the vegetable oil while continuously whisking until the dressing is fully emulsified.
  4. Just before serving, drizzle the freshly made dressing over the salad mixture in the large bowl. Gently toss everything together until the salad is evenly coated in the dressing.
  5. Dish up your Crunchy Chinese Chicken Salad immediately, serving it chilled or at room temperature for best flavor.
