  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/2 cup oil canola or vegetable
  • 1/2 cup brown sugar light or dark can be used
  • 1 cup grated carrots freshly grated
For the Frosting
  • 3/4 cup unsalted butter room temperature
  • 1 3/4 cup powdered sugar sifting prevents clumping

Baking Steps
  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch springform pan.
  2. Beat cream cheese and sugar together until smooth. Add sour cream, heavy cream, and vanilla, then mix in eggs.
  3. Sift together the flour, baking powder, baking soda, salt, and spices, then prepare wet ingredients in another bowl before combining.
  4. Layer the carrot cake batter and cheesecake mixture into the pan, ending with cheesecake on top.
  5. Bake for 45 to 55 minutes until the center jiggles slightly; cool in the pan for an hour, then refrigerate for at least 6 hours.
  6. Prepare frosting by beating butter and adding powdered sugar; spread over chilled cheesecake.
  7. Remove the cheesecake from the pan, slice, and serve.
