  • 1 cup rolled oats opt for gluten-free if necessary
  • 1/2 cup all-purpose flour substitute with gluten-free flour if desired
  • 1/4 cup brown sugar alternative: coconut sugar
  • 1/2 cup melting butter or vegan butter/coconut oil

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, whisk together almond milk, chia seeds, maple syrup, vanilla extract, and salt. Stir until well combined and let sit for about 10 to 15 minutes until thickened.
  2. In a medium saucepan, melt butter over medium heat. Add diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Sauté for 5 to 7 minutes until apples are tender but hold their shape.
  3. In a separate bowl, mix rolled oats, flour, brown sugar, and cinnamon. Pour in melted butter and mix until crumbly. Spread evenly on a baking sheet and bake at 350°F (175°C) for 15 to 20 minutes.
  4. Layer your pudding by starting with chia pudding in serving glasses, followed by apple compote, and topped with crumble. Repeat layers and finish with crumble on top.
  5. Serve immediately or chill in the refrigerator for a couple of hours before serving.
