- In a large mixing bowl, whisk together almond milk, chia seeds, maple syrup, vanilla extract, and salt. Stir until well combined and let sit for about 10 to 15 minutes until thickened.
- In a medium saucepan, melt butter over medium heat. Add diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Sauté for 5 to 7 minutes until apples are tender but hold their shape.
- In a separate bowl, mix rolled oats, flour, brown sugar, and cinnamon. Pour in melted butter and mix until crumbly. Spread evenly on a baking sheet and bake at 350°F (175°C) for 15 to 20 minutes.
- Layer your pudding by starting with chia pudding in serving glasses, followed by apple compote, and topped with crumble. Repeat layers and finish with crumble on top.
