Step-by-Step Instructions
  1. In a large mixing bowl, whisk together olive oil, white wine vinegar, Italian seasoning, garlic powder, and a pinch of salt and pepper until smooth.
  2. Cube the sharp cheddar and pepper jack cheese into bite-sized pieces and add to the bowl of marinade, folding gently to coat.
  3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to up to 2 hours.
  4. Slice salami into quarters and prepare dill pickles by cutting into thin rounds.
  5. On a serving platter, arrange the marinated cheese cubes, and scatter the salami and pickle slices around it.
  6. Sprinkle freshly chopped herbs over the assembled platter and serve chilled or at room temperature.
