- Preheat your oven to 325°F (163°C). Cut a pie pumpkin in half and scoop out the seeds and pulp. Place on a lined baking sheet cut-side up.
- Cover the pumpkin with aluminum foil and roast for about 60 minutes until fork-tender.
- Once cooled, scoop the pumpkin flesh into a blender and blend until smooth. Add water if necessary.
- In a saucepan, combine pumpkin puree, sugar, apple juice, maple syrup, and pumpkin pie spice. Stir well.
- Heat the mixture over medium-low heat, stirring until it simmers. Reduce to low and simmer for 40-60 minutes.
- Blend for smoothness if desired. Use an immersion blender or transfer back to blender if needed.
