Baking Instructions
- Preheat your oven to 350℉ (175℃). Line an 8 x 8-inch baking pan with parchment paper.
- In an electric mixer, combine butter, granulated sugar, vanilla extract, flour, cinnamon, and salt. Mix until a soft dough forms.
- Press the dough evenly into the bottom of the baking pan. Bake for 15-17 minutes, until lightly golden.
- In a large mixing bowl, whisk together eggs, pumpkin puree, brown sugar, pumpkin pie spice, ginger, salt, and evaporated milk until smooth.
- Pour the pumpkin filling over the crust and bake for 60-75 minutes until the center is set.
- Let the bars cool for 15 minutes, then refrigerate for 2-3 hours to set completely.
- Whip heavy cream until stiff peaks form. Fold in confectioners’ sugar and a splash of vanilla extract.
- Slice the bars and serve each topped with whipped cream.
