Method
 

Baking Instructions
  1. Preheat your oven to 350℉ (175℃). Line an 8 x 8-inch baking pan with parchment paper.
  2. In an electric mixer, combine butter, granulated sugar, vanilla extract, flour, cinnamon, and salt. Mix until a soft dough forms.
  3. Press the dough evenly into the bottom of the baking pan. Bake for 15-17 minutes, until lightly golden.
  4. In a large mixing bowl, whisk together eggs, pumpkin puree, brown sugar, pumpkin pie spice, ginger, salt, and evaporated milk until smooth.
  5. Pour the pumpkin filling over the crust and bake for 60-75 minutes until the center is set.
  6. Let the bars cool for 15 minutes, then refrigerate for 2-3 hours to set completely.
  7. Whip heavy cream until stiff peaks form. Fold in confectioners’ sugar and a splash of vanilla extract.
  8. Slice the bars and serve each topped with whipped cream.
