  • 1 tsp Spices (Cumin, Paprika, etc.) adjust to taste
  • 2 tbsp Olive Oil or avocado oil

  • 1/2 cup Chopped Jalapeños for extra heat
  • 2 tbsp Olive Tapenade for flavor boost

Step-by-Step Instructions
  1. Begin by warming a large skillet over medium heat and adding a splash of olive oil. Toss in the diced onion and grated carrots, cooking for 4-6 minutes until the onion turns translucent. Stir in the minced garlic and sauté for an additional minute.
  2. Transfer the cooled sautéed vegetable mixture to a food processor. Add the chickpeas, oats, fresh cilantro, and spices, pulsing until they reach a near-smooth consistency.
  3. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  4. Using your hands, form the blended mixture into patties, about 3 inches in diameter. Place them on the prepared baking sheet, leaving space between each. Bake for 30 minutes, flipping halfway through.
  5. Once baked, carefully remove from the oven and allow to cool for a minute. Serve on whole-grain buns, lettuce wraps, or over salads.
