- Begin by warming a large skillet over medium heat and adding a splash of olive oil. Toss in the diced onion and grated carrots, cooking for 4-6 minutes until the onion turns translucent. Stir in the minced garlic and sauté for an additional minute.
- Transfer the cooled sautéed vegetable mixture to a food processor. Add the chickpeas, oats, fresh cilantro, and spices, pulsing until they reach a near-smooth consistency.
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
